Local volcanic soils in the Mayacams Vineyards (Mount Veeder AVA) - togehter with high altitude 700 meters, warm summers and cold winters - creates small but intense berries in the vineyards. In 2007 we found mostly Cabernet Sauvignon topped with 9% of Cabernet Franc and Merlot. The wine aged 18 months in foudres barrels and then 12 months in barriques. Not oaky at all after time in contact with the wood. Subtle spice tones opens up in the glass supplemented with violet, cherries and raspberries with notes of cigar box and mint.
